Moroccan spiced carrots


Ingredients:

  • 500g carrots , halved and cut into thin rounds
  • 2 tbsp extra-virgin olive oil
  • harissa paste
  • 1 tbsp lemon juice
  • handful chopped coriander , plus extra


method:

  1. Place the carrots in a steamer set over a pan of boiling water and cook for 7-10 mins until just soft. Mix together the remaining ingredients, then toss the warm carrots through the dressing.
  2. Sprinkle with extra chopped coriander to serve.
